Is practically every field saturated these days?

It seems to be doom and gloom for just about all careers that require a university degree. From what I've read and heard anecdotally, one would be lead to believe that it is a mistake to pursue careers in law, engineering, science/mathematics, accounting, finance, etc. unless one is in the top 1% of the class and graduated from a top school.The only field I haven't heard this are the medical related ones (pharmacy, medicine, etc) and even with those fields there have been surveys that show a significant fraction of these professionals would not go into their field if they had to do it over again.

So, which fields these days are not saturated and people working in the field are generally doing well and not facing the constant pressure of being let-go?
